April 26, 2023 Main dishesSoups Turmeric vegetable soup Ready in: 35 minutes 3 portions Ingredients2 carrots1 small potato1 small sweet potato1 red onion3 tbsp olive oil1 tbsp turmeric5-6 chives, chopped2 tbsp olive oil1 leeka pinch of salt and pepper InstructionsStep 1Place a pot over medium to high heat. Add 1 tbsp olive oil.Step 2Cut all the vegetables into smaller pieces and add them to the pot.Step 3Cook about 10 minutes stirring regularly.Step 4Add 2 tbsp vinegar and then cover the vegetables with water.Step 5Cook about 15 minutes or until they become soft.Step 6Turn off the heat and after the boiling stops, process them with a hand blender directly in the pot or in a table blender, returning them to the pot.Step 7Add hot water (about 3 cups) until you reach the desired density.Step 8Add the turmeric, 1,5 tbsp olive oil, 2 tbsp vinegar, salt and pepper.Step 9Serve and sprinkle with the chives.
